We eat oatmeal at our house pretty often. It's a quick, easy breakfast, minus the artificial junk you find in oatmeal packets at the grocery store. We always have ingredients for homemade oatmeal on hand, so we never have to worry about what to eat in the morning.
Strawberry Chia Oatmeal
4 cups unsweetened almond milk
2 tablespoons local honey (I used Moai Bueno Honey)*
1 teaspoon vanilla extract
1 very ripe mashed banana
2 cups rolled oats
3 tablespoons chia seeds
pinch of sea salt
2 cups frozen sliced strawberries
hemp seeds, dried coconut, and cinnamon.
almonds, sunflower seeds, chocolate hummus, cacao nibs
1. Place all ingredients in a medium pot. Bring to a boil.
2. Reduce heat to medium and let simmer about 10 minutes, or to desired thickness, stirring often.
3. Divide into bowls. Add desired toppings, and serve.
*Moai Bueno Honey is sometimes available at the Aransas Pass Farmer & Artisan Market, the 1st Saturday each month, right across the street from Texas Strong Fitness. Visit the Downtown Aransas Pass Facebook page for more info.
